Shrimp and Green Chile Enchiladas

Living about 40 miles from Hatch, over the years we've eaten green chile in about every conceivable way. This recipe combines it with another of our favorite ingredients, fresh shrimp.
We think it's a match made in Hatch!

Green Chile Shrimp Enchiladas

2 c Chicken broth
12-15 large cooked shrimp, cut into bite-sized pieces
2 T butter or margarine
1 small onion, chopped
1 clove garlic, minced
2 T flour
1 1/2 c sliced mushrooms
1 c shredded  jack or cheddar  cheese
1 c basic green chile sauce
(homemade or canned)
1 c diced green chile
1/2 t salt
pinch of black pepper
10-12 Corn tortillas (2-3 per serving)
Oil for frying tortillas, if desired
chopped tomato for garnish
Filling: Cook onion, garlic & mushrooms in butter 10 minutes. Stir in the flour, cook for a minute or 2. Add 1 cup broth, simmer until thickened. Stir in the shrimp, salt and pepper.

Sauce: Blend the green chile sauce, diced chiles, and 1 cup of broth until smooth, using a hand blender or food processor. Warm the sauce in a small skillet.
Dip each tortilla into the chile sauce, fill with about 1/4 cup of the shrimp and mushroom filling.
Roll and place seam side down in a lightly oiled casserole.
When all tortillas have been rolled, pour remaining sauce on top. Sprinkle with cheese, bake 25 minutes at 350 degrees. Top with tomatoes.  Serves 4-6.
