Red Chile with Beef

Rich, spicy red chile sauce is the star here. Use our "Basic Red Chile Sauce" recipe, made with either dried red chiles or "fresh red" if available.

2 c basic red chile sauce
(from dried or fresh red peppers)
2 lbs chuck or round steak, cubed
 1 c beef or chicken broth
salt and pepper
2 T vegetable oil





 

Preheat the oil in a skillet. Season the beef with salt and pepper and add to the hot oil. Sear until golden brown.

Add the red chile sauce, bring to a boil, reduce to a simmer. If you like a thinner chile add more broth as desired.

Taste for seasoning and cover partially while simmering for 2 hours or until the beef is tender.

Serve with your favorite side dishes and warm tortillas.
(Can also be used as an enchilada or taco filling.)
