Rich, spicy red chile sauce is the star here. Use our "Basic Red
Chile Sauce" recipe, made with either dried red chiles or "fresh
red" if available.
Red Chile with Beef
2 c basic red chile sauce
(from dried or fresh red
peppers)
2 lbs chuck or round steak,
cubed
1 c beef or chicken broth
salt and pepper
2 T vegetable oil
Preheat the oil in a skillet. Season the beef with salt
and pepper and add to the hot oil. Sear until golden brown.
Add the red chile sauce, bring to a boil, reduce to a simmer. If you
like a thinner chile add more broth as desired.
Taste for
seasoning and cover partially while simmering for 2 hours or until the
beef is tender.
Serve with your favorite side dishes and warm tortillas.
(Can also be used as an enchilada or taco
filling.)
