The Companion Video - Professionally produced, about a half-hour long, the video shows step-by- step instructions for roasting green chiles at home, and for using dried red chile pods. We show the preparation of several favorite classic recipes from the cookbook, then take you along on a quick visit to the Hatch Chile Festival. There's also a look back at "The Whole Enchilada" fiesta, which was a favorite for chile lovers for over 30 years, and featured the Guiness Record-winning "World's Largest Enchilada".
