Hatch New Mexico Green Chile Recipes
Basic Green Chile Sauce

Here's one of the two "elixirs of life" for New Mexico chile lovers...the other being basic Red chile sauce.
Together these two basic sauces constitute the major ingredient of most chile dishes.
We think of these two sauces as the "Yin and Yang" of chile. Don't ask us to choose a favorite!

Green chile enchiladas

Basic green chile sauce, shown here on a stack of green enchiladas in the making. This delicious sauce is also the basis for numerous other green chile recipes.

               Basic Green Sauce
     ½ cup chopped onion
      1 garlic clove, minced 
      1 tablespoon olive oil
      1 tablespoon flour
       ½ cup chicken stock
       2 cups chopped green chile
         (roasted, peeled, seeded)
       ½ cup chopped tomato, 
                fresh or canned
       ½ teaspoon cumin
                salt to taste

Heat the oil and saute the onion a few minutes, then add the garlic and cook until softened. 
Stir in the flour, cook 2 minutes, then slowly add the stock. Add the chile, tomato and cumin.
 Cover and simmer at least 30 minutes, stirring occasionally. 
Add water or stock if sauce gets too thick. Add salt to taste. Makes about 3 cups.
